You’ve just now learned this term “Paleo,” and now I’m throwing a new term out at you: “AIP.” You have to be wondering what that is! “AIP” refers to Autoimmune Protocol, or more specifically, Paleo Autoimmune Protocol. AIP is Paleo but taken a few steps further in eliminations. Foods that are allowed on Paleo are eliminated on AIP, such as eggs, nightshades (i.e. tomatoes and bell peppers, among other foods), and nuts and seeds. These are all foods that are known to be allergens or intolerances for people with autoimmune disease, which is why they’re eliminated.
